02 Nov Sweet and Savoury delight: Roasted Carrots and Parsnips with Honey
Roasting carrots and parsnips with honey is a simple yet irresistible way to elevate the flavours of these root vegetables. The natural sweetness of the carrots and parsnips is enhanced by a drizzle of honey, resulting in a dish that’s both sweet and savoury.
Ingredients:
3 large carrots, peeled and cut into strips
3 large parsnips, peeled and cut into strips
2 tablespoons honey
2 tablespoons olive oil
Salt and pepper to taste
Fresh rosemary or thyme sprigs (optional)
Instructions:
Preheat your oven to 425°F (220°C).
In a mixing bowl, combine the carrot and parsnip strips. Drizzle them with olive oil and honey, ensuring they are evenly coated. Season with salt and pepper, and toss to mix.
Spread the vegetables in a single layer on a baking sheet. If desired, tuck a few sprigs of fresh rosemary or thyme among the vegetables for added flavor.
Roast the vegetables in the preheated oven for about 25-30 minutes, or until they are tender and slightly caramelized. Be sure to toss them halfway through the cooking time for even browning.
Once roasted to perfection, remove the vegetables from the oven and let them cool for a few minutes. Discard any herb sprigs.
Serve your Roasted Carrots and Parsnips With Honey as a delightful side dish that complements a wide range of main courses. The honey adds a luscious glaze to the vegetables, making them an ideal addition to your holiday feasts or everyday dinners. Enjoy the harmonious blend of sweet and savory flavors in every bite!
