Concept Your Kitchen (CYK Hospitalities) got an amazing opportunity to talk with Miss Puja Mishra , it was an enriching and fun conversation, she shared her views and experience as a culinary professional about the kitchen and much more.
Puja is been working in the industry past 3 years currently, she is working as a Junior Sous Chef in a renowned property.
We asked Chef what challenges she faced as a culinary professional in the industry, she was excited to answer. Chef told us that she never saw her journey as a challenge, she was always thrilled to learn new things, culinary industry is a skill-based industry every foot you move along it makes you better. She emphasized and said, ”every time you make a mistake, it’s an invention”.
We asked her since it’s a long-hour job, how she is focused, she said always stick with the process and assess the situation, never lose your temperament, and should not compromise the line of work. If there is a hurdle, just rectify it and move along. She quoted, ”people who go with the flow are dead fish”. She explained to us we should not always go with the flow because we tend to give in so easily that we don’t make the right decisions at times.
We referred kitchen as a battlefield, she smiled and said the kitchen is a battlefield, but no one losses there, every skill is important and everyone is important because our ultimate goal is to make our guests happy.
We asked Chef to advise upcoming graduates and aspirants, she said the students should solve the puzzle in three years of their course and stick to it, they should not hop around changing the department as it, later on, induce stress for stability. Students should be positive towards the decision they make.
We are inspired by the thought process of our budding chef. We wish her all the best in his future endeavors.
