Concept Your Kitchen (CYK Hospitalities) got a wonderful opportunity to talk with Chef Ishan Ahluwalia, it was an interesting conversation, he told us about the problems currently most of the restaurants facing and how difficult it is to survive in the hospitality industry these days.

We previously dined at Chef’s restaurant “The House Of Celeste”, it was quite an enriching experience, he portrayed the contemporary Indian cuisine exquisitely and marvelously.

He told about the lay-offs happening in the restaurants’ which is quite a challenge with hospitality professionals. Salary has also become a concerning aspect for them, as they haven’t been paid for the previous month and there is no notice of how things will proceed in near future.

We asked him about how the restaurant will operate once the lockdown situation changes, he said they will follow protocols as instructed by the government, at the same time they will unfold the operations in stages so that there is no hindrance in work as well as safety of staff and its guests are cooped in the process. He also explained the challenge with fine dining restaurants is rent and they are negotiating on that factor with concerned authorities, cause its difficult to survive on the delivery and take away model. He said,” Fine dine restaurants not only serve food, but they also enrich it with mesmerizing experience”.

We asked him, what will be his exit strategy if things don’t fall in the right place and he may lose his job, he just said survival is the key to existence and he believes in the industry, that it will recuperate in near future. We are happy to see the positive attitude and wish him all the best in his future endeavors.
