27 Apr Chef Talks with Chef Shantanu
Getting to know the industry is tricky, as trends change and the perspective of every individual differs. The hospitality industry is diverse, entertaining, and can be enthusiastic every time. To know the industry from a professional point of view is different & enriching for our readers.
We got to meet today Shantanu Sharma, who is a chef and currently working with The Oberoi, New Delhi since 2017. It’s great to know him, he has a dynamic personality and a very positive outgoing attitude.
During this pandemic, Shantanu shared his thought on how business is getting affected by the Covid-19, second wave, and it’s devastating for each employee of the hotel. He told us that the industry was picking up its pace but it feels like we have been pulled down again to the difficult start.
He told us operations wise the footfall for lunches is dull and dinner operations have drastically fallen. Revenue is down by 80%. Delivery and takeaway are still in the process to make up for lost revenue. It’s a difficult time, the Oberoi’s New Delhi is supporting their employees in all possible ways, we asked him about how government policies have been a help, he said: “that government failed the hospitality industry”. The hotel is opting for various tactics to support the survival, we hope they live out these tough times.
We asked him, what will be his exit strategy if things don’t fall in the right place, he just said survival is the key to existence and if had to face the scenario he will work for himself and support his livelihood. We are happy to see the positive attitude and wish him all the best in his future endeavors.
