Diwali, the festival of lights, brings with it an abundance of joy, love, and delicious sweets. Among the myriad of treats that grace our tables during this festive season, Phirni holds a special place. This creamy and aromatic Indian rice pudding is a perfect addition to your Diwali celebrations. In this blog, we’ll guide you through crafting a heartwarming Phirni that will dazzle your taste buds and brighten up your Diwali.
Ingredients:
1/2 cup Basmati rice, soaked for 30 minutes
4 cups whole milk
1/2 cup sugar
1/2 tsp cardamom powder
A pinch of saffron strands
1/4 cup chopped nuts (almonds, pistachios, and cashews)
1 tsp rose water
Edible silver or gold leaves for garnish (optional)
Instructions:
Drain and grind the soaked Basmati rice into a coarse paste, adding a few tablespoons of milk. The rice paste should have a grainy texture.
In a heavy-bottomed pan, heat the remaining milk and bring it to a boil. Then, reduce the heat to a simmer.
Add the rice paste to the simmering milk, stirring constantly to prevent lumps.
Continue cooking on low heat, stirring frequently, until the mixture thickens and the rice is fully cooked.
Add sugar, saffron strands, cardamom powder, and rose water. Mix well and simmer for a few more minutes.
Stir in the chopped nuts and cook for another couple of minutes.
Remove the Phirni from the heat and let it cool to room temperature.
Once it’s cooled, refrigerate for a few hours until the Phirni sets.
Garnish with edible silver or gold leaves (if using) and more chopped nuts before serving.
